Hand-Drip Coffee Course Taught by the JHDC 2020 Champion
In Japan, "hand-drip coffee" is the most familiar brewing method, enjoyed everywhere from homes to coffee shops.
This class focuses on "controlling the flavor" of that very drip coffee.
We believe that one of the most important aspects of controlling drip coffee is the skill of sensory evaluation—the ability to assess flavor accurately.
Even if you have an image of the flavor you want to create, you cannot adjust it to your goal without correctly understanding the current state of the coffee in front of you.
A unique feature of this class is that the curriculum is designed to improve both brewing techniques and sensory skills simultaneously.

By repeating this practical cycle, you will deepen your understanding of both brewing and sensory evaluation at the same time.

Time: Starts at 9:45 AM for the Trial Plan, and 9:00 AM for all other plans.
Course Flow (Example)
- 1Orientation (approx. 10 min)
- We will discuss your goals and the specific points you wish to focus on to determine the direction of the session.
- 2Understanding Brewing Basics (approx. 10 min)
- We will explain the mechanics of how coffee compounds are extracted and methods for adjusting flavor.
- 3Hands-on Brewing Practice (approx. 90 min)
- You will perform actual extractions. We will then taste the coffee you brewed together to evaluate the results and discuss improvements.
- 4Summary & Q&A (approx. 10 min)
- We will organize what was learned during the session and address any remaining questions.

From a casual trial session to ongoing plans for steady skill development, choose the one that best fits your needs.
- Bringing your own coffee beans is recommended, but you may also use our stock (varieties are pre-selected by us).
- Bringing your own equipment is recommended, but rentals are available if you prefer to come empty-handed. (100V power available)
- All lessons are one-on-one, with a curriculum customized for each individual.
- Session duration includes preparation and orientation time.
